After 15 minutes, take the lid off with one hand and quickly turn the sweet potatoes over with the other hand, using tongs. Replace the lid immediately.
Continue cooking over low heat. Set your kitchen timer for15 minutes.
I've written detailed instructions… but you turn the sweet potatoes 4 times to cook them on all sides. The first 2 times they are cooked over medium heat, and the last 2 times they should be cooked over low heat.
