  1. First wash and cut bitter gourd in round shape and put 1 tsp salt and keep for 10 -15 mins
  2. Now cut potato in cubes. Now take deep wok and add enough oil for deep frying. Squeeze little with hands the cut bitter gourd and deep fry till little golden colour and also fry potatoes till golden brown.
  3. Now take 1 tbs of same fried oil and roasted chopped onion with green chilli and few curry leaves saute for one minute add ginger Garlic and saute till raw smell goes and add 1 tsp of gram flour and saute well on slow flame.
  4. Add bitter gourd and potato add all dry masala except salt becoz we have already put salt in bitter gourd before lastly u check and it according ur taste if needs water or sticking masala sprinkle little water. If u water add 1/2 tsp of mango powder it is optional on slow heat keep for 2-3 minute or mix masala all over it.
  5. Serve with Parantha and chapatti with dal fry it is good match.in this there is u feel no bitterness in bitter gourd.
