The ingredients needed to make Stir fried veggies:
Get Handful french beans
Prepare 3 medium carrots
Prepare 2 medium courgettes
Take 2 medium broccoli florets
Prepare 1 green pepper
Make ready 2 large onions
Get 2 tablespoons sesame oil (or sunflower)
Take 1 tablespoon dark soy sauce
Make ready 1 teaspoon garlic powder
Take 1 cup vegetable or beef stock
Take 65 ml coconut cream (about 2 tablespoons)
Instructions to make Stir fried veggies:
Wash all you vegetables. Chop the onions, courgettes, carrots and french beans into medium strips. Cut the green pepper into medium cubes. Separate the brocolli into smaller florets.
Steam the french beans in a steamer for 5 minutes
Put 1 tablespoon of the oil into a large pan or wok. Let it heat up then add the green peppers and stir fry for 30 seconds. Remove and put them in a bowl.
Next add the courgettes and stir fry them for 30 seconds then remove and put them in the same bowl that has the green peppers
Next add the french beans and carrots to the pan and stir fry for 30 seconds and remove and place them in the bowl with the other cooked veggies
Add the broccoli to the pan and stir fry for 1 minute then remove and add it to the other veggies
Add the 2nd tablespoon of oil to the pan and let it heat up. Add the onions and fry until light golden. Add in all the stir fried veggies and stir fry for a few seconds.
Add the soy sauce and garlic powder and toss together for a few seconds then add the vegetable stock and stir. Let it simmer for about 2 minutes
After 2 minutes add the coconut cream and stir it in. Let it simmer another 2 minutes after which the vegetables will be done.
The sauce will have thickened and will look something like this
Serve immediately with some rice or noodles or anything else you may fancy
