Instructions to make Momos with homemade eggless mayo and Schezwan cutney:
  1. Take 1spoon oil in a wok,heat it then add ginger and garlic,add chopped green chillies.
  2. Add chopped onion saute it till translucent,now add chopped capsicum and crumbled paneer,salt and amchur powder.Saute for 2 mnts and keep aside.
  3. Take maida,add a teaspoon of oil and salt to taste.Make a soft dough with water.
  4. Roll a big chapati,cut circles and fill the momos with paneer capsicum filling and give any shape of your choice.your moms are ready to be steamed.
  5. Now for mayonnaise,take boiled potatoes in a mixer,add salt,sugar,black pepper powder,a spoon full of olive oil,vinegar and milk.Mix it for 1 mnt.your veg mayonnaise is ready.
  6. Now for Schezwan chutney take whole red chillies add hot water and soak for 5 mnts.Remove the seeds and grind it with water.
  7. Add a spoon full oil in a pan heat it add ginger,garlic to hot oil stir it,now add chilli paste and saute it.Now add soya sauce,vinegar,salt, Tomato sauce and saute till oil ozzes out.Your Schezwan chutney is ready to be served.
  8. Schezwan chutney is ready.
  9. Now take a steamer or a idli pot add water to boil.steam the momos and serve hot with chutney and mayonnaise.
