Prepare plain flour
Instructions to make Tempura #newcookschallenge:
Combine dashi stock, mirin, sugar, and soy sauce in a small saucepan and bring it to a boil. Then lower the heat and let it simmer until sugar is completely dissolved. Remove from heat and set aside.
Tempura Ingredients. Gather all the ingredients. Slice the sweet potato & potatoes in thin pieces and soak in water for 10 mins to remove excess starch. Pat dry with kitchen paper.

Once the ingredients are ready, heat up a cup of oil to 180°C in a deep fryer or pot. Start making the batter.
Gather all ingredients for batter. Sift plain flour/all purpose flour. Add the egg into the very cold sparkling water/iced water. Whisk vigorous and discard the foam on the surface. Pour the egg mixture slowly into the flour.
Mix the batter for about a minute with chopsticks in a figure of 8 motion. Do not over mix & leave some lumps in the batter. Keep the batter cold all the time.
Start deep frying. Fry root vegetables for 3-4 mins. Mushroom 1-2 minutes. Do not over crowd the pot. Transfer tempura to a wired rack or paper towel to remove excess oil. Between batches remove the crumbs which will burn and turn the oil darker.
