Pro Tip: We re-roll the scraps to create additional cookies, but limit the amount of rerolling as much as possible.
  4. Bake until bottoms are lightly browned, 12-16 minutes. Cool 1 minute before removing from pans to wire racks. Sprinkle with confectioners' sugar. Enjoy!
