  1. Take 1 1/2 cup green papaya, julienned and soaked in cold water to keep firm
  2. Take 1 cup cherry tomatoes, cut into halves
  3. Prepare 1/4 cup roasted peanuts
  4. Get Cilantro leaves (optional)
  5. Take Dressing
  6. Take 2 gloves garlic, minced
  7. Prepare 1-2 green or red chillies
  8. Get 4 tbsp palm sugar, diced
  9. Prepare 2 tbsp dried shrimps, diced
  10. Get 6 tbsp fresh lime juice
  11. Make ready 2 1/2 tbsp tamarind juice
  12. Get 4 tbsp fish sauce
Instructions to make Papaya Salad:
  1. In a mortar and pestle, pound the garlic and chillies until the garlic is slightly bruised. Then add the palm sugar, dried shrimp and half of the peanuts. Mash all together.
  2. Add the lime juice, tamarind juice and fish sauce. By this time make sure the palm sugar if already dissolved into the dressings.
  3. In a bawl, combine the dressing with the green papaya and tomatoes. Top with the remaining peanuts and some cilantro.
