Heat Oil in pressure cooker. Add cumin seeds, bay leaf, green cardamom, cinnamon stick. Let it crackle.
Add chopped capsicum and baby corn. Fry till it become light brown in colour. Add ginger and garlic paste, turmeric powder for colour. I didn't use saffron. Red chilli powder, cumin powder and gar am masala.Mix it and cook for few minutes till the raw smell of masala goes off. Add chopped tomato fry till the tomato become tender.
Wash rice twice. Soak the rice for 30 minutes.Fry rice cook till the rice coated with masala. Add water as needed. Close the lid of the cooker and wait for 3 whistle. Once it is done. Cool it. Open the lid. Transfer the birayani to a beautiful bowl. Garnish with mint leaves and coriander leaves. Ready to serve with Raita
