  1. Prepare 1 head romanesco cauliflower
  2. Make ready 2 tablespoon olive oil
  3. Make ready 4 tablespoon butter
  4. Take 2 Garlic cloves minced or finely chopped
  5. Take 1/4 teaspoon chilli flakes or one fresh red chilli
  6. Take 1 tablespoon fresh parsley
  7. Prepare to taste Salt
  8. Take to taste Ground black pepper
Steps to make Whole Roasted Romanesco Cauliflower:
  1. Start by preparing the cauliflower. Remove as much of the stem and leaves as you can and discard.
  2. Place the cauliflower in a microwave/oven safe dish.
  3. Rub the cauliflower with olive oil and some salt.
  4. Add about 1/4 cup to the bottom of the bowel and place in microwave for 10 minutes and then another 5 minutes.
  5. Preheat oven to 220c.
  6. Place the dish into the preheated oven for 12-15 minutes until browned.
  7. While it's roasting make the sauce. Place a small pan over medium heat.
  8. Melt the butter (I also added a drizzle of olive oil). Add the garlic and chilli flakes and cook for 2-3 minutes. Next add the parsley, black pepper and salt if needed and cook for another minute.
  9. When the cauliflower is cooked poured the sauce over the cauliflower and enjoy.
