BONUS POINTS: finish each bowl with a pinch of soft goat cheese crumbles.
Notes: - If you have a high quality blender, like a vitamix, your soup will be more uniform and silky. Feel free to blend longer to achieve the desired texture. - As with most recipes that call for nuts, roasting them at 375°F for 7-10 minutes will yield a better flavor. Be sure to let them cool to room temperature before use. - The goat cheese should be added at room temperature.
